Food allergies in schools are a much bigger problem than most people realize. Statistically, 8% - 10% of students live with food allergies or celiac disease making eating food at school potentially dangerous. Many school food service providers are unable to accommodate these students, leaving them excluded from the school lunch program. Research shows that this exclusion not only damages academic performance, but also inhibits social development by preventing children from sharing in the critical socialization of the shared school lunch experience.
